Chubby Hubby Fudge

I love fudge. It’s dangerous stuff. Each sugar-infused piece packs a serious calorific punch. But sometimes it’s just worth it… like when it involves my favourite combination – peanut butter and chocolate, yay. I saw these chubby hubby fudge bites on What’s Cookin’ Chicago, and I knew I had to try it. But somehow it wasn’t quite peanut buttery enough for me. So I added a layer of peanut butter fudge in the middle. Check it out!

Here’s What You Need:

  • 1 14 oz. Can Sweetened Condensed Milk
  • 200g White Chocolate + 200g Milk Chocolate
  • 1/2 cup peanut butter
  • 2 Tbs. Unsalted Butter
  • 1 tsp. Vanilla
  • 2 Cups Pretzel Sticks, broken into pieces
  • 1/4 tsp. Sea Salt

For the Extra Peanut butter fudge layer

  • 1/2 cup peanut butter
  • 5 oz butter
  • 1 tsp vanilla
  • 2 cups powdered sugar

Here’s what you do:

  1. Line 8×8 pan with parchment paper.
  2. Put peanut butter, chocolate, butter, sweetened condensed milk,  and vanilla in microwave safe bowl. Microwave on high for 30 seconds.
  3. In medium sized pot melt butter and peanut butter (for peanut butter fudge layer) over medium heat.
  4. Go back to microwave. Remove bowl and stir. Return to microwave for another 30 seconds. Repeat until completely melted and combined.
  5. Returning to the stove, when peanut butter / butter mixture is boiling, remove from heat. Stir in vanilla and powdered sugar.
  6. Quickly layer the fudge in pan: chubby hubby, peanut butter, chubby hubby. Chill until solid. Cut into tiny squares. Do your best to eat just one. Good luck!
