White Chocolate Cupcakes with Cookie Dough Frosting

I tried something yesterday that I just have to share with you. We were having some people over for dinner and I needed to make a dessert. I scanned my list of bookmarks and found something wonderful – white chocolate cupcakes with cookie dough frosting! Picky Palate is a genius. I tried a few white chocolate cake recipes before, but this one is definitely top. And the frosting – who knew that cookie dough went so well with white chocolate?! Wow, and wow again.

Here’s what you need:

  • 1 cup flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 cup sugar
  • 1 cup white chocolate chips (about 200g- melted)
  • 2 eggs
  • 1/2 cup sour cream (I used 125g low fat natural yoghurt)
  • 1/2 cup vegetable oil
  • 1 tsp vanilla
  • FROSTING
  • 113g butter
  • 3/4 cup brown sugar
  • 1/4 tsp salt
  • 3-4 tbs sweetened condensed milk
  • mini chocolate chips (I used chopped milk chocolate with hazelnuts)

Here’s what you do:

  1. Preheat oven to 160C and line cupcake tin with liners.
  2. Mix dry ingredients. Then add wet ingredients until just combined.
  3. Spoon into cupcake tray. Bake for 15-18minutes until toothpick comes out clean.
  4. Make frosting. Cream butter, sugar and salt. Add sweetened condensed milk until you get desired consistency. Add chips.
  5. Frost cupcakes once completely cool.
