Peanut Butter S’mores Brownies

A couple weeks ago I tried a no-pudge brownie recipe in my White Chocolate Cookie Dough Brownie Bars. It worked out really well. Unlike a lot of low-fat brownie recipes that I’ve tried, it was still fudgy and decadent. With 4th of July right around the corner, I’ve had s’mores on the brain. You know I love peanut butter, and so it didn’t take much of a creative leap to come up with this – Peanut Butter S’mores Brownies. Check out the gooey yumminess:

Here’s what you need:

  • one batch no-pudge brownies
  • 1/4 cup creamy peanut butter
  • 2 tbs vegetable oil (preferably peanut oil)
  • 3 cups marshmallows

Here’s what you do:

  1. Make up the brownie batter and get it into the oven.
  2. In the meantime, heat peanut butter and oil over the stove. Stir until smooth. Add marshmallows. Stir until melted and well combined.
  3. With 5-10 minutes left on the brownies, remove them from the oven and top with marshmallow mixture. Return to oven till fully baked. The marshmallow mixture should have browned.

Best served warm and possibly with ice-cream (or if you’re keeping with the no-pudge theme, low-fat frozen yoghurt)
