Biscoff Nutella Ice Cream

To continue the celebration of Belgium and ice cream, I have a wonderful new ice cream flavour for you: Speculoos (Biscoff) Nutella ice cream! And the best part is… it’s a 3 ingredient recipe. The genius is it’s simplicity. You see shortly after Speculoos spread came out here in Belgium, I had the good fortune to have both it and Nutella in the house. At the last minute we had some people over for dinner and I had nothing to serve for dessert. I scanned the cupboards and quickly came up with a plan – dessert dippers. I put out a plate of cut up fruit (apples and bananas and some tea cookies) and the jar of Nutella and Speculoos. The plan was to dip them separately. But somehow they ended up getting mixed up on the plate and a love affair was born. Somehow the Nutella tempers the sweetness of the Speculoos and adds, well… a special something. I suppose everybody has their own perfect ratio, but for me it’s about 2/3 Speculoos, 1/2 Nutella. Let me tell you, a-maz-ing! The other day I was thinking. You see I have a favourite peanut butter ice cream recipe (it works great for Speculoos ice cream too). It was time to see if it would work with the yummy Speculoos/Nutella mixture of yumminess. Are you ready? Here are the ingredients:


And now for the simple instructions:


So simple, so yummy, so perfect to continue the celebration of National Ice Cream Month =)

Here’s what you need:

  • 1 cup Speculoos/Nutella mixture (go with whatever ratio you like best)
  • 1 2/3 cup milk
  • 1 large soup spoon Speculoos (for drizzle)

Here’s what you do:

  1. Mix the Nutella and Speculoos together.
  2. Heat milk over medium heat. Add Speculoos/Nutella mixture. Whisk until smooth (like chocolate milk).
  3. Chill until about 40F. Turn in ice cream maker.
  4. Microwave soup spoon of speculoos for 15 seconds to make it pourable. Swirl into ice cream. Freeze and enjoy =)
