Apple Cinnamon Oatmeal Cookies with a Caramel Thumbprint
Want a cookie? Want something a little different? How about these apple cinnamon oatmeal cookies with a caramel thumbprint? They’re a combination of Brown Eyed Baker’s Chewy Oatmeal Raisin Cookies (with a twist) and Annie’s Eats’s Vanilla Bean Caramel Sauce – two of my favourites! Wanna make some too?
Here’s what you need:
- 3/4 cup flour
- 1 1/2 cups old fashioned oats
- 1/4 tsp baking powder
- 1 tsp cinnamon
- 1/4teaspoon salt
- 1/2 stick butter (57g)
- 1/4 cup apple sauce
- 3/4 cup brown sugar
- 1/4 cup stevia
- 1 egg
- CARAMEL
- 1/4 cup sugar
- 3/8 cup light cream
- pinch sea salt
Here’s what you do:
- Heat oven to 175C (350F). Line cookie sheet with parchment paper.
- Cream butter and sugar. Add egg and apples sauce. Continue to beat. Mix dry ingredients in separate bowl. Fold into wet until completely combined.
- Spoon onto cookie sheet and shape into balls.
- Bake for 15 minutes. (makes about 12 cookies)
- While baking, make the caramel – melt sugar over medium heat, stirring towards the center until completely melted and amber. Remove from heat. Whisk in half the cream and salt. If caramel seizes return to low heat and stir until sugar melts again. Stir in remaining cream.
- Remove cookie from the oven. While still hot, use a spoon to make an impression in the middle of each cookie. Fill with caramel.

Looks delicious, what a great idea! I’ve had my eye on that vanilla bean caramel sauce recipe, will have to give it a try one of these days 🙂
It’s definitely worth a try. It’s become my go-to caramel sauce. It’s scary good =)
