Party Appetisers – Cranberry Apple Brie Bites

Ready to bake

It’s the season of Hollywood award shows, political inaugurations, and the Superbowl. That means it’s time for parties with appetisers, lots and lots of appetisers. I love that because it means I can try a lot of different little bites. Over Christmas I got a chance to try out several different variations so that I would be more than ready when January came along… and so I could share them with you. Here’s one of my favourites – cranberry apple brie bites!

Here’s what you need:

  • 1/2 cup cranberry sauce
  • 1/2 cup fresh cranberries
  • 1 apple (peeled and chopped)
  • 1/4 cup brown sugar
  • 1 package light brie
  • phyllo pastry sheets

Here’s what you do:

  1. Heat oven to 350F (160C fan oven). Line muffin tin with muffin liners (I forgot this step and it was too messy – oops)
  2. Mix the apples, cranberries, cranberry sauce and brown sugar together in a medium bowl.Apples and cranberries
  3. Line each muffin tin with phyllo pastry. Add a small square of brie and a tablespoon of fruit mixture.materials
  4. Bake for 15ish minutes until pastry is brown and cheese is melty. Now just watch them disappear. Yum =)

    Sounds delicious, and really healthy! I’m trying to come up with a good super bowl menu at the moment. Too many things to choose from 🙂
