I have an easy as pie recipe for you that’s sure to impress – White Chocolate Speculoos Truffles. Actually it’s a leftover recipe, you know, one of those that comes from bits you had left over from another recipe. This one is inspired from what was left in my kitchen after the Brown Butter Speculoos Truffle Cookies. It’s three ingredient magic =) Ready?

Here’s what you need:

  • Speculoos spread
  • White chocolate
  • Powdered sugar

Here’s what you do:

  1. Put the speculoos in the microwave for 20 seconds. This will make it nice and liquidy. You can even do it in the jar if you’re down to the end. Pour the liquid speculoos into a bowl. Mix with powdered sugar till you get a consistency of your liking. I like equal parts speculoos/powdered sugar (using the initial volume of the un-microwaved speculoos). 
  2. Portion out the mixture into little balls and freeze.
  3. Melt white chocolate. Use a fork to dip the speculoos balls and let harden. That’s it. You’re done. Now go and enjoy =)
