Apple Caramel Cookie Crumb Bars

I made it kinda by accident. You see, I ran out of butter, but I had to make dessert for a church lunch. So I looked through my list and I remembered one of the first recipes I posted on the blog, cookie sticks,

And then I thought apples, and well of course that naturally lead me to caramel. And before I knew it, I had it – a gooey, wonderful cookie bar, with a hint of coffee cake and a whiff of apple pie. I promise they’re like magic. I call them caramel apple cookie crumb bars and I am sooo making them again!!! Check it out…

Apple Caramel Crumb Cookie Bar

Here’s what you need:

Cookie Base

  • 1/2 cup vegetable oil
  • 1/4 sugar
  • 3/4 brown sugar
  • 1 egg
  • 2 packets vanilla sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1.5 cups of flour

Apple filling

  • 1 pink lady apple
  • 1/4 cup brown sugar
  • 1 tsp of cinnamon

Crumb based on this

  • 1/3 cup  sugar (half brown, half white)
  • 1tsp cinnamon
  • pinch salt
  • 1/4 cup oil
  • 3/4 cup cake flour


  • 1/4 cup white sugar
  • 1/4 cup sweetened condensed milk
  • salt, splash vanilla

Here’s what you do:

  1. Line 8×8 pan with parchment and preheat fan oven to 160C (350F).
  2. Mix cookie stick ingredients in order written above. Press into pan. Bake for 5 minutes.
  3. Peel and cut apple. Mix with cinnamon and sugar.
  4. Mix together crumb topping.
  5. Remove cookie base from oven. Add apples, then crumb. Return to oven for 10-15 minutes. Do NOT overbake.
  6. While cookie bar is baking, make caramel. Melt sugar in heavy bottomed pot, stirring occasionally. When it reaches an amber colour, add sweetened condensed milk. Stir until it becomes a smooth caramel sauce. Pour over bars.
  7. Let cool completely. Cut and enjoy!
