Amazing Apple Crumb Muffins
These are the best, moistest apple crumb muffins ever! I used a crumb coffee cake recipe from Brown Eyed Baker. I lightened it up a bit, added some apples, and the most brilliant part – I cooked the muffins for 10 minutes before adding the apple and the crumb. So good, I didn’t even manage to snap a picture – they were gone that quickly. Normally I wouldn’t share a recipe without a picture, but these were GOOOOD! Just picture this:

Here’s what you need:
- 35g butter
- 1/4 cup apple sauce
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1/2 cup sour cream
- 1 1/4 cup flour
- 2 tsp baking soda
- pinch salt
- 1 pink lady apple
CRUMB
- 35g butter
- 2 tbs brown sugar
- 1/4 cup flour
- 1 tsp cinnamon
- 1 packet vanilla sugar
- pinch salt
Here’s what you do:
- Heat the oven to 350F (160C fan oven). Line muffin tin (makes about 8).
- Cream together butter, sugar, and apple sauce. Add eggs, mix well. Continue with vanilla and sour cream.
- Mix flour and baking soda, and salt in a separate bowl. Add to wet mixture a little at a time.
- Pour into muffin tins. Bake for 10 minutes.
- Meanwhile put all the crumb ingredients in a medium bowl. Pinch together with fingers until crumby.
- Peel and cut single apple into tiny pieces.
- Remove tin from oven. Push apples into muffins, top with crumb.
- Return to oven for an additional 10-15minutes. Do NOT over bake.
- Meanwhile make glaze. Stir together powdered sugar and 1 tbs milk. Slowly add more milk until desired consistency is reached.
- Remove muffins from tin and allow to cool on wire rack. Put foil under wire rack. Pour glaze over muffins.
- Serve once muffins are completely cold (trust me, they’re better that way – I know, crazy!)
